Any decent VPN should do. NordVPN, ExpressVPN, Torguard, whatever. Take your pick.
Yes, although I’ve heard reports of people opening accounts with an ITIN in lieu of an actual SSN. YMMV.

I heard some people opening account with hotel address only on passport copy, what about this?
